Method
- Brown the beef properly, in one layer, in batches if you must. Grey meat makes grey ragù and no amount of simmering fixes it.
- Onion and garlic in the rendered fat, then the tomato, cooked until it darkens.
- A long, low simmer with the lid ajar — forty-five minutes minimum, and it keeps improving for two hours.
- A splash of milk or cream at the end rounds the acid off. Pasta water, not more sauce, to make it coat.
