What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rice
- canned tomato
- onion
- cumin
- garlic
Good if you have them, fine if you do not: peas.
Method
- Onion and garlic in oil, cumin bloomed, then the rice stirred until glassy.
- Tomato in and cooked for a minute before the liquid — raw tomato added with the water gives you pink rice that tastes of nothing.
- Measured liquid, lid, low, eighteen minutes, no lifting.
- Ten minutes' rest with the lid on, then fork it through. Lime and coriander at the table.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- rice
- Starch that either steams or fries, and the two want opposite things.
- canned tomato
- Picked and packed in season, which is why it beats a pale fresh tomato most of the year.
- onion
- The base under most of this library.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares cumin, onion, garlic
Cumin chickpeas
Pulse and spice. Bloom cumin in oil, onion, garlic, chickpeas. Lemon at the table. Smash some so it is a stew, not a salad.
Shares rice, onion, cumin
Black beans and rice
Pantry core, and cheap enough to be a habit. Bloom the cumin in fat, mash a ladleful against the pot for body, and more lime than feels right.

Greens shakshuka
Same wells as tomato shakshuka, using the greens that will not last.
Shares garlic, cumin, onion
Palak with ricotta
Ricotta stands in for paneer. Brown it first so it is not just dairy in greens.
