Method

  1. A fresh shot of espresso, cooled slightly but not cold. Cold brew gives no crema and the crema is the foam.
  2. Reposado rather than blanco — coffee needs something with a little wood to meet it.
  3. Shake very hard with plenty of ice for a full fifteen seconds.
  4. Orange peel expressed over the top. Coffee, agave and orange is an unexpectedly good three.
