Method
- Onion soft in butter in an ovenproof pan, then the torn bread in to soak up the fat and toast a little.
- Beat the eggs with the cheddar and plenty of salt, and pour them in over a low heat.
- Pull the setting edges in and tilt so the raw egg runs underneath, until the base is set and the top is still loose.
- Under a broiler for two minutes, no more. A frittata is done when the middle still wobbles — carryover finishes it while it rests, and every dry frittata was cooked until it looked done.
