easyWhy tonight. Boiled dinner that is not bland: good stock, leek, bay. Mustard at the table is the sauce. Don't turn it into stew.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- beef
- carrot
- leek
- potato
- bay leaf
Good if you have them, fine if you do not: dijon.
Method
- Skim the surface obsessively in the first twenty minutes. That grey foam is what makes an unskimmed broth muddy.
- A bare simmer, never a boil, for three hours. A boil emulsifies the fat and clouds everything.
- Vegetables added by cooking time and taken out as they are done, not left in for the whole cook.
- The broth is served first as a course, then the meat and vegetables with mustard. Two dishes from one pot.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- beef
- Fat and connective tissue decide the method.
- carrot
- Sweetness that survives long cooking, which is why it sits under so many braises.
- leek
- The gentlest allium — sweet and silky when cooked slowly in fat.
- potato
- Waxy holds its shape, floury falls apart, and almost every potato complaint is the wrong one for the job.
- bay leaf
- The ingredient nobody can taste and everybody notices missing.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares beef, potato, carrot
Cornish pasty
Meat and root in pastry. Pepper is the seasoning. Crimp it. Don't make a pot pie and skip the crimp — the seam is the handle.
Shares beef, potato, carrot
Cottage pie
Lamb would be traditional; beef is the ground meat you have. Mash on top, peas last so they stay green.
Shares beef, bay leaf, carrot
Braised brisket
Onions first until they slump. Tomato and bay. Low and slow until the beef tears. Not a chili.
Shares beef, potato
Leftover beef hash
Crisp potatoes, leftover beef last.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
