Method
- Brown the brisket hard on both sides, then the onion in the same fat until genuinely dark.
- Braise it fat side up and covered, at 150C, for three hours minimum. Low and slow is the entire recipe.
- It is better made a day ahead: chill it whole in the liquid, lift the fat off, then slice it cold.
- Slicing it cold across the grain is why restaurant brisket holds together and home brisket shreds.
