easyWhy tonight. Brown the pork until it is sandy-crisp.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pasta
- pork
- chili oil
- soy sauce
- scallion
Good if you have them, fine if you do not: sesame seeds.
Method
- Brown the pork hard and let it go past the point of grey until there are genuinely crisp brown bits. That texture is the dish.
- Soy sauce into the hot pan at the end so it reduces onto the meat rather than pooling.
- Chili oil is added off the heat, in the bowl. Cooked, it loses its aroma and just tastes hot.
- Noodles with a splash of their water under the pork, scallion and sesame on top, and stir at the table.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- pasta
- The sauce finishes on the pasta, not the other way around.
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- chili oil
- Heat suspended in fat, which spreads it further than dry chili can.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- scallion
- Two ingredients on one stalk.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
