easyWhy tonight. Mezcal, coffee and honey. Smoke and roast are the same family of flavors, which is why this works and sounds like it should not.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- mezcal
- coffee
- honey
Method
- 1½ oz mezcal, a shot of espresso, ½ oz honey syrup. Shake hard with ice if you want it cold and foamed, or stir it hot.
- Smoke and roast are the same family of flavor, which is why this works far better than mezcal in most other warm drinks.
- Honey rather than sugar. Agave and honey belong together.
- Orange peel expressed over the top, and a pinch of salt if you are shaking it cold.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- mezcal
- Smoke over the same agave backbone, and it does not blend so much as lead.
- coffee
- Bitterness and roast, which is why it turns up in savory rubs as often as in dessert.
- honey
- Sweetness with a floral edge and enough body to change the texture of what it is in.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Shares mezcal, honey
Honey mezcal sour
Honey syrup and lime against smoke. Let the honey down with warm water first or it sinks straight to the bottom.

Oaxaca Old Fashioned
Mezcal, honey and bitters. Smoke and honey together are the reason this became a modern standard.
Shares coffee, honey
Coffee cardamom cooler
Cold coffee, one crushed pod, orange peel. Soda if you want it long.
Shares coffee
Amaro coffee
Amaro and coffee, hot or over ice. The bitterness of both stacks rather than clashing, and it is what to serve instead of dessert.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
