Method
- Salt the eggplant and drain it thirty minutes, then roast or fry the slices before layering. Raw, they release water into everything.
- Cinnamon in the meat sauce, not much of it, and cooked down until dry rather than saucy.

- Rest it twenty minutes out of the oven before cutting. It needs the time to set.
