Method
- Bruise the ginger and simmer it in a splash of water with the turmeric for five minutes before the coconut milk goes in.
- Turmeric needs fat to be worth anything, which is why coconut milk works here and water alone does not.
- Coconut milk in and warmed gently, never boiled, or it splits.
- Honey and a crack of black pepper off the heat. The pepper is traditional and it also makes it taste less like a health drink.
