Method

  1. Coconut milk and lime split if you pour them together cold. Whisk the honey into the coconut first, then add the lime slowly.
  2. Soda over ice at the end so it drinks long rather than heavy.
  3. A pinch of salt, which makes coconut taste more of itself.
  4. It separates on standing. Stir before pouring rather than shaking it into a permanent foam.
