Method
- Fry the herbs and greens in oil for a long time first — fifteen minutes, until they darken and the oil goes green.
- That frying is the defining step. Unfried herbs give you a thin, grassy pot.
- Turmeric bloomed with the onion, beef browned hard, then a long slow braise.
- Dried lime or a lot of lemon at the end. It should taste distinctly sour, which is the point of the dish.
