Method
- Stale bread, or bread dried in a low oven. Fresh bread dissolves into the custard and you get sweet porridge.
- Soak it properly — thirty minutes at least, pressed down so every piece is saturated.
- Bake it in a water bath if you want it silky, straight on the shelf if you want the top crisp. Both are correct, differently.
- Pull it with a slight wobble at the middle. It firms as it cools.
