Method
- Grate the cucumber and squeeze it through a cloth. You want the juice, not the pulp, or it goes gritty.
- Yogurt whisked smooth with water, then the cucumber juice, then mint bruised in your hand.
- Salt rather than sugar. This is the savory one and it is far better on a hot day than the sweet version.
- Lime at the end and more salt than seems right. It should taste seasoned, not sweet.
