Method
- Spatchcock the bird so it lies flat. Even thickness is why this cooks evenly and a whole bird does not.
- The marinade is chili, garlic, lemon and paprika, and it wants four hours minimum.
- Reserve some marinade before it touches raw chicken, to baste with later. Basting with the used marinade is not safe.
- Roast hot and baste in the last fifteen minutes. Lemon again at the table.
