What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- beef
- molasses
- chili flakes
- thyme
- onion
Good if you have them, fine if you do not: stock.
Method
- Molasses is bitter as well as sweet and too much makes the pot medicinal. Less than looks right.
- Brown the beef hard first, then everything low and slow for three hours.
- Thyme on the stalk and fished out at the end.
- It is better the next day and better again the day after. Traditionally the pot is simply topped up.

Why each of these is on the list
What the ingredients are actually doing
- beef
- Fat and connective tissue decide the method.
- molasses
- Bitter, mineral and dark, and it is what makes brown sugar brown.
- chili flakes
- Heat you can dose. Bloomed in oil they spread through everything; scattered at the table they stay sharp and sit on top. Same flakes, two different dishes.
- thyme
- The most patient herb here — it survives long cooking, which almost nothing green does.
- onion
- The base under most of this library.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Birria
A chile-cumin beef stew you dip tortillas into. Consommé is the point.

Daube
Provençal pot roast. Wine, thyme, a strip of orange peel. Low until it tears. Orange is aroma, not marmalade.

Leftover brisket tacos
The pot roast, warm tortillas, onion, lime. Don't put barbecue sauce on it unless you mean Kansas.
