Method
- Brown the beef hard and in batches, then set it aside — the browning is the difference between a soup and dishwater.
- Onion, carrot and cabbage into that fat, cooked until the cabbage has gone soft and sweet rather than merely wilted.
- Stock, beef back in, and a long low simmer until the meat gives.
- Dill and vinegar at the end. Both are non-negotiable here: without them it is a beige cabbage pot.
