Method

  1. Beet juice is earthy and sweet and it dominates everything, so use less than half what you think.
  2. Orange and lime together — orange alone is not sharp enough to stand up to it.
  3. Honey only if the beets are not already sweet enough, which they usually are.
  4. Serve it very cold. Warm beet juice tastes of soil and there is no rescuing it.
