Method
- Whisk the polenta into the liquid while it is still cool, then bring it up. Rained into boiling water it lumps instantly.
- Low heat and forty minutes of occasional stirring. Instant polenta is a different and worse food.
- Mushrooms browned hard and separately, garlic and thyme only at the end.
- Butter and parmesan beaten into the polenta off the heat, and serve it looser than you think — it sets fast in the bowl.
