Soft polenta, barely set eggs.

mediumWhy tonight. Soft polenta, barely set eggs.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- polenta
- eggs
- butter
- parmesan
Good if you have them, fine if you do not: chili flakes.
Method
- Whisk the polenta into cool liquid and bring it up slowly. Rained into boiling water it lumps and stays lumpy.
- Forty minutes on low with occasional stirring. Butter and parmesan beaten in off the heat.
- Poach the eggs in barely-moving water with a splash of vinegar, and swirl before the egg goes in.
- Serve the polenta looser than looks right — it sets in the bowl in the time it takes to carry it to the table.

Why each of these is on the list
What the ingredients are actually doing
- polenta
- Coarse cornmeal that wants far more liquid and far more patience than the box says.
- eggs
- The cheapest way to turn a side dish into dinner.
- butter
- Flavor and body in the same spoonful.
- parmesan
- Salt, fat and savory depth in a form that keeps for months.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
