Method

  1. 1 oz orgeat, 1 oz lemon, soda to top over plenty of ice. No alcohol at all and it is not a lesser drink.
  2. Almond gives it body, which is the thing most alcohol-free drinks are missing — they are usually thin rather than weak.
  3. Stir the orgeat and lemon together first. Poured separately the orgeat sits at the bottom and the last mouthful is syrup.
  4. A dash of alcohol-free aromatic bitters if you have them. Bitterness is structure, and juice without it reads as squash.
