Method

  1. 2 oz gin, ¾ oz lemon, ½ oz orgeat, shaken hard with ice.
  2. Strain into a chilled glass with no ice at all, then top slowly with soda so the head rises above the rim.
  3. A fizz has no ice in the glass. That is what separates it from a Collins and it is why it has to be drunk quickly.
  4. Orgeat and juniper is an old and underused pairing — almond softens gin the way vermouth does, without the wine.

gin
Botanicals over a neutral base, and every bottle draws its own map — juniper-forward gin makes a bracing drink, a softer modern one makes a floral one.
orgeat
Almond syrup with a floral edge, and it brings texture as much as sweetness — it is what gives a tiki drink its soft, thick mouthfeel.
lemon
Acid you add at the end, not the start.
soda
Carbonation is a texture and it is the first thing you lose.
