Method

  1. 1½ oz mezcal over a full glass of ice, topped with tonic.
  2. Quinine and smoke are a better match than quinine and juniper, and almost nobody makes this.
  3. Grapefruit peel, expressed and dropped in.
  4. Keep the pour short. Smoke lengthens as it sits, so a drink that is right at the first sip is too much by the last.
