Method

  1. 1½ oz amaro over a full glass of ice, topped with tonic.
  2. Quinine and amaro are both bitter and from different directions, which makes this more interesting than the same drink with soda.
  3. Orange peel, expressed and dropped in.
  4. Keep the pour short. Bitterness accumulates as you drink and a generous one is tiring by the bottom of the glass.
