Method
- 1½ oz amaro over a full glass of ice, topped with tonic.
- Quinine and amaro are both bitter and from different directions, which makes this more interesting than the same drink with soda.
- Orange peel, expressed and dropped in.
- Keep the pour short. Bitterness accumulates as you drink and a generous one is tiring by the bottom of the glass.
