Method

  1. Cloudy apple juice, maple and lemon, stirred until the maple disperses, then soda over ice.
  2. Maple is more assertive than honey, so use less of it than you would use honey.
  3. Lemon is doing real work here. Apple and maple are both sweet and low in acid and it is cloying without it.
  4. A cinnamon stick as a stirrer rather than ground cinnamon, which floats as grit and never dissolves.
