Method
- 2 oz aged rum, ¾ oz lemon, ¾ oz honey syrup — honey let down half and half with warm water, or it will sit in a lump in the tin.
- Shake hard — longer than a syrup sour, because honey is heavier and will otherwise sit in the bottom of the tin — then strain up.
- Honey and aged rum share the same caramel register, which is why this works better than a plain rum sour.
- A dash of Angostura on top. Without it the honey reads as flat sweetness rather than as honey.
