Method
- Brown the sausages whole first, then take them out and slice. Sliced first they lose their fat and dry.
- Fennel sliced and cooked in that fat for fifteen minutes until soft and sweet.
- Wine in and reduced hard, scraping the base clean.
- Sausage back in at the end. Fennel and pork is a classic because the anise cuts the fat.
