Method

  1. The structure is what makes a spritz, not the alcohol: bitter, sweet, sour, bubbles, and something to give it weight.
  2. Bitter orange soda or a nonalcoholic aperitif over plenty of ice, topped with tonic and soda in equal parts.
  3. A dash of alcohol-free aromatic bitters and a good squeeze of lemon. Both are doing structural work, not decoration.
  4. Wine glass, orange slice, and served to everyone at the same moment as the alcoholic one. Handing it over late is how it becomes the lesser drink.
