Method

  1. Red wine, soda and orange over a full glass of ice. Something light and chilled — a big oaky red is wrong here.
  2. Chill the wine first. A room-temperature red poured over ice arrives lukewarm and watery in the same minute.
  3. Two parts wine to one soda, and adjust toward the soda as the afternoon goes on.
  4. Orange sliced rather than juiced, so it sits in the glass and perfumes it slowly.
