easyWhy tonight. A tin and yesterday's rice. Season the rice while warm, salt and drain the cucumber, and keep it in sections rather than stirring it flat.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- tuna
- rice
- cucumber
- soy sauce
Good if you have them, fine if you do not: sesame oil, scallion.
Method
- Season the rice while it is warm — soy, a little sesame oil, maybe rice vinegar. Cold rice takes on nothing.
- Cucumber salted five minutes and squeezed. Unsalted cucumber floods the bowl and turns the rice to soup.
- Tuna in large flakes on top rather than mixed through, so each bite is a decision.
- Scallion and sesame last. Build in sections you can see; a stirred bowl eats the same for twenty mouthfuls.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- tuna
- Canned in oil is a different ingredient from canned in water; the oil is flavor and should go into the dish, not the sink.
- rice
- Starch that either steams or fries, and the two want opposite things.
- cucumber
- Water and crunch, which is a real job in a rich dish.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
