easyWhy tonight. Season the rice while it is hot. Tuna mixed with a little soy, wrap in nori.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rice
- tuna
- soy sauce
- nori
Good if you have them, fine if you do not: sesame seeds, scallion.
Method
- Short grain rice, seasoned while warm, and shaped while it is still warm — cold rice will not hold together.
- Wet your hands and salt them before shaping. That salt is what seasons the outside and stops the rice sticking.
- Filling in the middle in a hollow, then closed over. Mixed through, it falls apart in the hand.
- Nori wrapped on at the last moment, or it goes limp against the rice within minutes.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- rice
- Starch that either steams or fries, and the two want opposite things.
- tuna
- Canned in oil is a different ingredient from canned in water; the oil is flavor and should go into the dish, not the sink.
- soy sauce
- Salt with a savory backbone, so it seasons and deepens in one move.
- nori
- Sea salinity in dry sheet form.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
