Method
- Loosen the tahini with warm water before anything acidic. It will still seize, and it still comes back with more water.
- Then soy, lime and grated garlic, whisked to a consistency that just pours off the spoon.
- Noodles rinsed cold if you are eating them cold, so they stop cooking and shed the starch that would glue them.
- Sauce it at the last minute. Tahini thickens as it sits and a bowl dressed early sets solid.
