Method
- Break the pasta into the pan dry and toast it a minute in the oil. It gives a nuttiness the boiled version never has.
- Tomato and enough water to cook the pasta in, simmered with the lid on until the pasta is nearly done.
- The starch stays in the pan rather than going down the sink, which is what makes the sauce cling.
- Ricotta in spoonfuls and mozzarella torn over, lid on for three minutes off the heat. Basil at the table.
