Method
- Panko soaked in a splash of milk or water first. Dry breadcrumbs pull moisture out of lean turkey and give you golf balls.
- Mix with your hands and stop the moment it comes together. Overworked meat goes springy and tight.
- Fry one teaspoon of the mix and taste it before shaping the rest. It is the only dish where you get to check the seasoning in advance.
- Sear them in a pan for color, then finish in the oven. Turkey needs the color because it will not brown much on its own.
