Method
- Six and a half minutes for the eggs, then straight into ice water. They cook again inside the sausage.
- Peel them cold and dry them, then dust with flour so the meat grips rather than sliding.
- Wrap in a thin even layer using a sheet of cling film to help, and seal every seam.
- Fry at 165C for a few minutes only. Hotter and the crumb burns before the sausage is cooked.
