Method
- Take the sausage out of its skins and brown it in craggy lumps, pressed and then left alone. Broken up small it goes to grit.
- Fennel sliced thin into the sausage fat and cooked until it softens and sweetens — ten minutes at least.
- Tomato in and cooked down hard until it darkens, then pasta water to make a sauce.
- Chili flakes and the fennel fronds at the end. Fennel with sausage is a classic because the anise cuts the fat.
