Method
- Fennel softened slowly in oil first, ten minutes, until it is sweet rather than aniseedy.
- Fish folded in at the very end in big flakes. Simmered, it goes dry and stringy.

- Lemon and chili off the heat, and enough oil that the pasta is glossy rather than dry.
