Method
- Potatoes into the hot oven first, whole and small, until they are cooked through — twenty-five minutes ahead of the fish.
- Crush each one with the base of a glass, oil them, and put them back to crisp.
- Salmon onto the same tray for the last eight to ten minutes, skin down, salted and oiled.
- Dill, lemon and capers over everything at the table. Salmon and potatoes take very different times, and putting them in together is how one of them gets ruined.
