Method
- Asparagus goes in first for five minutes on its own. Salmon at 200C wants about twelve; asparagus wants seventeen.
- Salmon on top, oiled and salted, and pull it while the middle still looks slightly translucent.
- It carries on cooking on the tray. A fillet that looks done in the oven is overdone on the plate.
- Lemon and dill after it comes out, never before — both go bitter under direct heat.
