easyWhy tonight. Aged rum instead of gin, which brings its own sweetness — so slightly less vermouth than equal parts.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rum
- campari
- sweet vermouth
Good if you have them, fine if you do not: orange.
Method
- 1 oz aged rum, 1 oz Campari, 1 oz sweet vermouth, stirred cold and served over a big cube.
- Aged rum, not white. The caramel is what stands in for gin's structure, and a light rum simply disappears under the Campari.
- Orange peel expressed hard over the surface.
- Softer and rounder than a gin Negroni, which makes it the version to hand to somebody who says they do not like Negronis.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- rum
- The widest spirit on the shelf.
- campari
- Bitter, sweet and red, and it is not shy.
- sweet vermouth
- Fortified wine, which means it is perishable — an open bottle on a warm shelf is why so many home Manhattans taste dusty.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Americano
Campari, vermouth and soda over ice — the Negroni before gin was added, and about half the strength.

Negroni Sbagliato
The mistaken Negroni — prosecco where the gin should be. Lower, lighter, and easier to drink two of.
Shares campari, sweet vermouth
Boulevardier
A Negroni that swapped gin for whiskey, and it wants a little more whiskey than equal parts to stand up to the Campari.

Mezcal Negroni
Campari and vermouth with smoke underneath. Mezcal is assertive, so pull it back slightly from equal parts the first time.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
