Method

  1. Rosemary is assertive and piney, so steep one small sprig in warm honey syrup and taste before adding a second.
  2. Fresh orange juice, and an expressed peel over the top — the oil in the peel is more of the aroma than the juice is.
  3. Soda last, poured at an angle so it keeps its lift.
  4. It is a Christmas-shaped drink that works all year, and it is better without alcohol than with.
