Method

  1. Unsweetened cranberry, which is tart and tannic rather than sour — that tannin is what gives the drink length.
  2. Fresh orange for sweetness, honey only if the cranberry is very sharp.
  3. Soda over plenty of ice, stirred once.
  4. An orange peel expressed over the top. This is one of the few zero-proof drinks that does not need salt to work.
