What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pork
- clams
- garlic
- white wine
- paprika
Good if you have them, fine if you do not: cilantro.
Method
- Brown the pork hard and braise it until nearly tender before the clams are anywhere near the pot.
- Clams take three minutes and pork takes an hour, which is the whole logistical problem of the dish.
- Wine and paprika with the pork, then clams added at the very end with the lid clamped on.
- Take them out as they open. Cilantro and lemon at the end, and bread for the broth.

Why each of these is on the list
What the ingredients are actually doing
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- clams
- They cook in the time it takes them to open, and any that refuse should be thrown out.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- white wine
- Acid and a little sweetness for deglazing, and it should be something you would drink.
- paprika
- Color and a mild sweet pepper flavor, and it scorches into bitterness almost instantly.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
