Method
- Brown the sausages whole in the pot first, then out and sliced. Every one-pot dish lives or dies on this step happening properly.
- Peppers, onion and paprika into the fat, cooked until they soften and the paprika smells sweet rather than dusty.
- Rice stirred through the fat until glossy, then stock — and now the lid goes on and stays on.
- Do not peek. Steam is the cooking, and every lift of the lid costs you liquid and time. Rest it ten minutes off the heat before forking through.
