Method
- Miso, honey and soy whisked cold into a paste. It burns fast, so it is a finishing glaze and never a marinade for the whole cook.
- Cook the vegetables through first — roast or sear hard — with no glaze anywhere near them.
- Glaze on for the last three or four minutes only, under a hot grill or in a very hot oven, watched.
- Sesame oil at the end off the heat, and scallion. It should be lacquered and blistered, not blackened.
