Method
- Carrot, onion and garlic sweated in fat until soft and sweet — ten minutes, with no color.
- Lentils and stock, then a long simmer until they have collapsed and thickened the pot themselves.
- Blend a third and stir it back if you want body without cream.
- It will taste flat until the acid goes in. Lemon or vinegar at the end, and more than you expect.
