Method
- Onion and garlic in fat until soft, cumin bloomed for thirty seconds.
- Beans and stock in, simmered twenty minutes so it stops tasting like a tin.
- Blend about half and stir it back. All of it blended is baby food; none of it is a bowl of beans in water.
- Lime at the end, and more than one squeeze. Something cold on top — soured cream, raw onion, avocado — because the soup itself is one soft note all the way down.
