Method
- Brown the sausages whole, take them out, slice them. Sliced first they lose their fat and turn to crumbs.
- Carrot and onion soft in the sausage fat, then lentils and stock with a bay leaf.
- Brown or green lentils, not red — red collapse to purée and this wants lentils that hold their shape.
- Sausage back in for the last ten minutes. Vinegar at the end, which is what turns it from brown and worthy into a dish.
