Method
- Braise the pork until tender first, then build the sauce — the peanut goes nowhere near a long cook.
- Peanut butter loosened with hot braising liquid before it joins the pot, or it clumps and catches.
- The sauce should be thick and coating rather than soupy. Reduce it rather than thickening it.
- Green beans in at the very end for three minutes. Traditionally served with shrimp paste on the side, salty against the mild sauce.
