What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- drambuie
- lemon
- honey
- scotch
Good if you have them, fine if you do not: cinnamon.
Method
- Water just off the boil, never boiling. Boiling water drives off the alcohol and scalds the honey flat.
- Scotch and Drambuie together, since Drambuie is already sweetened and herbal.
- Honey and lemon off the heat, stirred until dissolved.
- A lemon studded with cloves in the mug. It is aroma more than flavor and it is most of the comfort.
An educational pour, not a reprint of a licensed spec. No allergen or alcohol-safety claim.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- drambuie
- Scotch sweetened with honey and herbs, so it is both the spirit and the sugar in whatever it lands in.
- lemon
- Acid you add at the end, not the start.
- honey
- Sweetness with a floral edge and enough body to change the texture of what it is in.
- scotch
- Malt, smoke or both depending on the bottle, and it does not sit quietly under other ingredients.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Penicillin
Scotch, lemon, honey and fresh ginger, with a smoky malt floated on top. The float is the point and stirring it in ruins it.

Rusty Nail
Scotch and Drambuie. Start at four to one and adjust — Drambuie is honeyed and it takes over quickly.

Drambuie highball
Honey-whisky liqueur lengthened. Lemon so it is not candy. A splash of scotch if you want more peat.

Scotch highball
The Japanese highball idea: lots of ice, soda last, one lift. Peel if you have it.

Cook it, then tell the shelf what you used.
